I know that I'm supposed to wait a month from antibiotics to breath test to confirm eradication, but after over 2 weeks off the triple therapy and not having an appointment for another 20 days, I'm really tempted to just take Prilosec just to see if it will make me feel better. My symptoms have returned and I'm assuming the ulcer or gastritis has not healed.

Gastritis may continue for a while even when Helicobacter is gone.
Try using H2 blockers and eating alcaline food ( bananas, avocados, raisins, pear...) drink a lot of water, and avoid stress.

I tried Zantac with little results. Does it take multiple days to kick in?

When I take Zantac for my symptoms it usually works after about an hour.

If you you need to do the breath test though you can't take it for 2 weeks prior to the test, or else it can mask the results.

Well not really but it takes time for your wond to heal so you should be feeling the benefits after 3 days usage.
